GARLIC MEATBALLS (OR MEATLOAF)
- 1 lb extra lean ground beef (96% fat free, 4% fat)
- 1 cup prepared white rice
- 1 tbsp minced dried garlic
- 1 tbsp minced dried onion
- 1/2 tbsp garlic salt
- 1⁄8 tsp black pepper
- 1/2 cup prepared oatmeal
- 1/4 cup + 1⁄8 cup egg beaters OR egg WHITES
- 1/4 cup DRY oatmeal
- 1 cup prepared TVP (Textured Vegetable Protein)
- 12 oz healthy choice traditional Pasta Sauce (fat free)
Prepare a 9 x 9 baking pan by spraying it with non stick cooking spray. Preheat oven to 350. In a mixing bowl combine hamburger (raw), rice, garlic, onion, garlic salt, black pepper, oatmeal, egg beaters, dry oatmeal and TVP. Mix very well. Form hamburger mixture into 1 inch balls and drop into pan. Hamburger mixture will be VERY sticky. Bake for 15 minutes, then pour spaghetti sauce over meatballs and continue to bake until cooked through. For meatloaf, place hamburger mixture into loaf pan sprayed with non stick cooking spray and bake until cooked through.
